So I have around $300 my tank has been cycling for around 6 months and I was orinally going to purchase a giant order of coral including LPS ans SPS. After doing more thinking about it I decided to buy about $150 of fewer corals and more fish and to buy a skimmer instead. Is this a better choice?

IMO a skimmer is a necessity. And, before you start raising SPS get you tank parameters on an even, steady level. Good tests kits are necessary too.

I agree. I'd get the skimmer first, then add a few fish. I've always added corals one at a time, so if there's a problem I only have one piece to worry about.

You will save more money by investing in needed equipment than corals. Look at it this way the tanks that the coral and fish are coming from are probably more mature and the water parameters are probably more stable also the water quality is probably better also. So we want our tanks to be of high quality also this will ensure the survivability of both corals and fish and save you money in the long run.
We are all guilty of filling out tanks with corals and fish bit not buying the needed equipment to keep them truly alive and healthy. A good skimmer IMHO is worth it's weight in gold.
Your question is a great one to ask.
