I recently bought a new bigger and better aquarium and it will be here tomorrow. I will have to remove all my fish from my old tank because I am using the sand in it. What is the best thing to keep them in/safest way to move and hold them until the new tank is set up? Thanks!

It really depends. On your prep work. 5 gallon buckets will suffice for a few hours. What's your plan? Pre mixing new water? Preheating said water? Etc...

In the past, I have used a clean rubbermaid container with a heater and an airstone. How long do you plan on having to keep the fish out of the tank?

I don’t plan on keeping them out for more than an hour or two. I’m reusing a lot of the same water since it’s the same fish going into the new tank and then I’ll make more tonight so it’s ready to top it off tomorrow.

Yeah 5 gallon bucket, or rubbermaid will be fine if you've got a spare small heater or air pump around an air stone wouldn't hurt.

No more than 2 hours at most
You should be good for that amount of time. Another thing you may want to do is put a couple pieces of pvc pipe in the container to create hiding areas for your fish. This will reduce stress while you are getting their new home setup.
