Will a 24 inch 6 bulb fixture be enough for a 36 Gallon bowfront which is 30 inches long? I really dont want the 36 inch fixture spilling all that light into the room.

Yes that'll be about perfect. Maybe even a little much.

Got the dimmable one so I can have a nice mixed tank and crank it up later when the upper colonies start to shadow the rest

Yep, just have to place your corals accordingly. All the high par stuff closer to the middle and higher up in the tank.
