What is the tallest you would go on a 30x30 cube? In regards to the fish, flow, lighting? Thanks in advance.

IMO either 24" for ease of lighting or 30" for the cube aesthetic. Getting good PAR 24" deep would be easier than 30", but that's coming from a guy that's only ever had 24" deep tanks.

What do you plan on keeping? If you're just talking fish, you can go pretty high without worrying about PAR. You might consider looking at some of the seahorse tanks if you like them tall because the height is needed for their courting behavior, if I remember correctly.
 
I did 30" tall with a planted tank once. I had columns of sargassum swaying from two opposing MP10 powerheads in wave mode. It was also nice for a DSB for turtlegrass and still had plenty of space for rockwork/fish, and a 2" PVC network for the eel under the sand.
