Is 1 degree swing per hour acceptable? Not sure if I should be satisfied or dig further? All suggestions appreciated.

I do not see an issue with it. If the temp never drops a tiny bit the heater would never kick on. It is not a sodden change either. I would not worry.
 
That looks pretty good to me. I actually think the larger the temperature swing your tank can take, the better prepared it is for a power outage, heater failure, or other issue that might occur (loss of household heating, HVAC, etc.).

I live in Florida. While I don't need to give much thought to cold, a power failure with excess heat is a concern. :)

It's interesting starting the thought process on power failure. I was thinking of picking up a small gas generator, however with as much as I am away it would be my luck that noone would be there to connect it . It has me seriously thinking of investing in an auto generator, which pushes my tank upgrade out .

Well, deal with the most likely scenarios first. I posted an article about strategies for your tank to survive power outages. I would be more than willing to help you brainstorm practical, inexpensive measure to help protect your investment against power outages :)
