I added a kole tang to my tank roughly two weeks ago.
My friend has had in qt, as it was bought before I got water in my own tank.

It' very timid, and hides with any movement within 5 feet of the tank.

It quickly comes back out roaming the tank, nipping at rocks, sand etc.
Also, I haven't seen it taking any processed foods, other than a few nips at nori, but not really interested.

Question is, how long will it take for it to be calm when feeding / approaching the tank?
I know all fish are different, so just looking for best guess/experiences.

The more he associates people with food, the more that timidness will decline. If you feed only once a day as opposed to several times a day, of course it will take longer.

Yes. I see this with the other fish that has been there a month+. However, these fish also took food immediately, and I haven't seen the kole interested in any foods given.
