to much carbon

It can "polish" the water too quickly if you increase the amount of carbon too fast.
 
I don't think that is entirely true. There are many factors that play into that.

It removes unwanted elements in the aquarium, it does not remove essential elements that our tank/coral uses. Google it, do some reading as I did as I once thought it removed good trace elements.

Carbon isn't discriminate. It will remove what ever will fit in its pore size.

Different types of carbon have different pore sizes.
