Too much Live Rock??

This is my first tank and has been set up now for a couple months and thriving. It's a 24g cube, so when I ordered my LR and sand I did so based on a 20 gallon, as I felt that would be sufficient. 20lbs of live sand and 40lbs of LR later ("The Package" from TBS) and I feel like I have too many rocks for any real scaping and coral placement.

What are your thoughts?

Just right.
 
Agree with Robin. I like minimalist scape best and if my parents let me get a bigger tank for Christmas I’ll be going for a minimalist rockscape since I just think it looks so sleek and gives lots of swimming room for fish.
In your case I don’t think there’s too much rock, probably just right for your tank size if going by the normal ideas.
 
I think if you used any less it would give you less space for coral. Also, I don't like the fake aquascape look. Yours looks natural.
