Can I top up my water with bottled water from the shop or does it need to be roi with salt

The water you use to top off your tank due to evaporation should be plain RO/DI water, only use salt if you're trying to increase your SG.

First off NO salt in your top off water.

The cleaner your water the better off you are. I highly recommend RO/DI

If you don't use RO water you may find you start growing excess algae from high iron in the water. Which is why use a deionization filter is recommended with an RO unit.

Top off should be RO/DI or distilled water only, no salt.

Your top off water is due to the water in your tank evaporating. Leaving the salt in your tank. You want to keep your water at a stable salinity level. At the top off water does that by replacing the evaporated water. You want to use RO/DI water to keep unwanted elements entering your aquarium.
