As water evaporates , we top off with RODI water .
What if it’s not evaporating , skimming wet and emptying the cup daily

Water evaporates, even when it seems like it isn't to the naked eye. The humidity level in the room will effect the rate of evaporation. And typically, you will see greater evaporation in the winter months when the heat is on and the humidity in the room is generally lower than it is in the warmer, more humid months of summer.

What kind of skimmer are you running?

You could back off on the air intake of the skimmer. This will allow the water level in the skimmer chamber to drop and allow a thicker foam to develop for skimmate that isn't so wet.

And why I haven’t adjusted the skimmer .
If I add fresh RODI water , I am worried it will lower the salinity

You add RODI to replenish for evaporation. You need to add new saltwater to replenish for skimmer removal. And test/monitor salinity to make sure it’s not being lowered.

Water evaporates, salt doesn't. As water evaporates from your system, salinity increases. As you top off water, salinity goes down.
