Ok took me a min to figure out this new app format but yay i did it. Those of you whom do not use an ato... Or those that are more informed than i. How do you determine the amount of water you need to top off with?

The simple way is drawn a line on your sump check it The next day and see how far it goes down within a day that's how I did mine set up

I put a piece of tape on the inside trim where I want the waterline to be. I top off every morning.

Im about a month from actually adding my water. Just trying to have all my ducks in a row first to have a smooth ride. The biggest question especially since ill eventually be adding corals is if u top a bit too much will it cause drastic salinity swings and kill said lifeforms?

Topping off does not cause SG swings. Water evaporates, the salt in the water does not. If you wet skim however, that can cause you to swing your SG levels, as the wet skimmate does remove salt with the water, then you top off with FW and your levels will go down, but this is if you constantly wet skim.
Normally no, top offs don't bother anything.
