I was just wondering if a female blue star or leopard wrasse will transition into a male if put singly into my tank. I have read that some have transitioned like that. I really like the males colors better than the females on both species.

Doubtful, but possible. If you have multiple females it's more likely. Still no guarantee though.

If you want males you are better off purchasing males from the beginning.
 
I think eventually they will transition, but it will take a couple of years or more. It also depends on how old it was when you got it. Keep in mind that the juvenile Blue Star Leopard Wrasse is colored the same as the adult female, so it is possible that simply maturing will cause it to become a male.
 
It’s never a guarantee, with fairy it’s certain in time. With leopards it’s possible. With all females eventually one will become male.
