Which should I get for my last Tang? I already have a Yellow Tang and a Blue Tang, the tank is 100 gallons.

Achilles or Purple Tang for sure!!!

My favorite is the Achilles tang but they are hard to get acclimated to a new system. Many starve because they just won't eat. Chevron's are beautiful as juveniles but I think they are ugly when they mature. If your willing to take a chance go with the Achilles. If not I would go with the Blonde Naso ro the Desjardini Sailfin. The Purple tang is also one of my favorites even though you don't have it listed.
 
I would love to have the Achilles in my tank, but I think if you did a bit of research on the fish, you might change your mind on trying to keep one.
 
I have on all the fish and have with every fish I've bought and never had problems with death, so that's why I have some more delicate species up there
