Anyone able to recognize this guy? I’ve got two of them coming up in two separate locations of my tank and I have no idea what they are. Just started growing. - should I get rid of them??

Its an aptasia. Sooner you get it out the better before it multiplies. . . So how to rid of it?
Easy. . . Using a syringe. . . get either lemon juice or preferably kalkwasser powder and mix into a thin paste and inject into the center core of the aptasia and it will safely melt away
 
I would actually avoid peppermint at this point if you have two. Use aptasia x or kalk paste immediately and seal the holes with superglue. If it's just two you should be able to keep them under controll (and watch for new sprouts). Very few "peppermint" shrimp sold at the LFS actually are the kind that eat peppermint and while you wait, they're likely to multiply.
