For serpent star, mine liked flake food a lot. For my tux urchin, when the tank is too clean I give it broken pieces of algae tabs. It won't eat nori for some reason.
Most urchin species eat algae (and, from what I've heard, they'll generally accept supplemental feedings with either nori or algae pellets).
From what I've seen, most true starfish species (Asteroidea) starve in our tanks, and their diets in the wild vary dramatically from one species to another (some are predators that eat snails or bivalves, others eat corals, others eat biofilms, etc.). So, knowing what species you're wanting to feed greatly impacts what you should try to feed it.
Most brittle/serpent stars (Ophiuroidea) do much better in our tanks, and, from what I've heard, generally do fine scavenging flakes, pellets, pods, etc. from our tanks.
