Since there are 2 drains, I would go with a true union gate valve on 1 and make it into a herbie drain.Or even put a true union ball valve on there.
Spa flex pipe works great for those joints. Can make it a bit longer and flex it into place.Only issue I see is getting all the plumbing the perfect lengths so the o-rings in the unions seal without stress. It will definitely take some test-fitting if you use only ridgid plumbing.
