I'm starting up a new 120g tank in the next few weeks, and any suggestions on utilitarian fish and what their utility is would be much appreciated!

Just a couple off the top of my head:

  • Bristle tooth tangs for scraping the rocks and getting thin film algaes
  • Zebrasoma Tangs for filamentious algaes
  • Six line wrasse or other less aggressive wrasses for pest control
Diamond gobies and engineer gobies are often listed as well for sand stirring capabilities. I personally think they are cool fish and you should get them for that alone. Their sand sifting leaves a lot to be desired and the tank owner can do a better job of stirring the sand bed than these fish.

ORA neon or sharknose goby to keep all your algae eaters nice and clean. Lot's of wrasses to choose from for pests, but would avoid sixline (or any xxxx-line wrasse), H. melanurus may be a better choice. Blennies/ tangs (zebrasoma & ctenochaetus) and foxface are usually good choices.
