I am looking at the AquaUltraviolet Advantage 2000+. It says that the recommended flow rate is "up to 233 gph". Is there some sort of gph sweet spot?

I plan to have this mounted in my sump, pulling from the return chamber and output routed into the same chamber that has my return pump; it will be it's own little inline system (aka, not spliced into the return, etc).

I could go with the Sicce Synchra 1.0, at ~251 gph, or the Sicce Synchra 0.5 at 185gph, or even the Sicce Synchra Nano, with ~110gph.

Which would be best? Are there other makes/ models that would be better?

I don't know much about plumbing... the UV has 3/4" barbs, while it seems all the pumps have 1/2" outs. Is there an adapter available somewhere?

I have the 25W Aqua UV. It's 3/4" barbs as well. You can buy a 3/4" adapter on BRS and hard plumb your plumbing (I did this). https://www.bulkreefsupply.com/schedule-80-male-pipe-adapter.html. You can then buy a reducing connector to reduce to 1/2". I would buy the 1.0 pump you listed, as the head pressure will probably lower it to 233 gph you are looking for.
