I was debating putting a valve on my overflow plumbing goin down to the sump BUT is there any real purpose for a valve on the overflow. Just wondering what people's thoughts are on this.

I have one on mine... But have never used it. I guess if I needed to tune it down from 1500 gph I could lol.

No reason for one as you never want to restrict the overflow. For maintenance the overflow will be drained so it does nothing there either.

I use a ball valve and a union on the overflow (in that order) to be able to turn it off and remove some of the plumbing for cleaning. Doesn't hurt and they are cheap and don't restrict flow at all. If you've ever tried to remove parts without a shutoff on the overflow you'll see how much saltwater you can get all over.

Where is your water coming from? The overflow should drain back to the sump once the pump is off.
