So I'm new to the hobby and I'm on week 8 of the new build 55 gallon glass with a sump refugium, protein skimmer, filter socks. Still no fish but I have 5 turbo snails and 5 blue legged hermit crabs.

My question is i just did a 5 gallon water. How long should i wait to test it to see if the water change has done anything to my nitrate level. I also have red gracileria in the refugium, live rock and now peed in about 30 oz of copepods.

You could test it next day. I've done testing of this nature just a couple hours after. You could potentially add a fish at this point since the nitrates have little effect on fish. You can also do a larger water change if needed to lower the nitrates to a level your more comfortable with.
