So I've let my tank maintenance slide a little bit the past month and my nitrates are pretty significant (around 80ppm). Obviously I'd like to get that back down to minimal. Large water changes can be tricky as you have to have a pretty precise match of parameters. My question is this, could I do a 30% water change this morning, and then another 30% water change this evening? A little less stressful than doing a 60% at once??

You could spread it out over the course of a few days. But 60 percent spread out over two water changes isn't really going to reduce nitrates by 60 percent. Cause when you do the second waterchange you'll be taking out the water you just added as well.

I would probably space it out a bit more. You'd probably be better off doing a 30 percent change once a week until your levels get where you want them.
