I'm just wondering where the water goes/disappears from my tank?
It seems every 4 or 5 days I have add a couple gallons of water. The tank has a cover.

The water evaporates, but the salt stays in. You will need to top off your tank periodically with RODI water. They also sell automatic top-off equipment -- depends on what you want to do with your tank set up. Be sure to regularly check the salt levels with your refractometer. :-) Good luck!
 
Your water will evaporate all the time. The amount depends on things like temperature and weather.

You do want to monitor it or get an ATO. By keeping a constant level you reduce salinity swings that could cause stress and various other issues
