I just want to hear from some other people what fish they always have wanted but know they just can't have. Whether it's due to the size of the fish, price, difficulty, or just rarity. I'm curious to see what some of you are able to come up with.

I know what my 3 dream fish would be.
1. Emperor Angelfish
2. Moorish Idol
3. Hawaiian Cleaner Wrasse

1) Humu Picasso Triggerfish
2) Regal Angelfish
3)Valentini Puffer.

Great question, btw!

Those are some nice fish you picked out. I had one of those humu's about 5 years ago, but what they sell as a "humu picaso trigger" is slightly different than what the Hawaiian call a "humuhumunukunukuapua'a". Nonetheless they are still a beautiful fish and I got mine after I came back from Hawaii. That is when I fell in love with their cleaner wrasse also.

The first 2 fish are about the only reason I would consider a fish only system. The puffer? I'm a wienie and don't want to deal with filing its teeth.

I'm surprised how many would like a Moorish Idol. I had one for a couple years. Awesome fish. They need to eat a few times day. Mine ate everything. If you get them to eat and set up auto feeders they stand a chance. Five or six feedings a day.

Blotched anthias (Borbonius)
Hawaiian Deep water Anthias
Cuddle fish (Separate Tank)

I am going to cheat and assume that we can include inverts (if not, I will accept the "boos" willingly):

(1) Octopus (I am a sucker for cephalopods, but frankly fear I don't have the skill to keep them).
(2) Peacock Mantis (I find Mantis Shrimp fascinating, but I do not have an interest in setting up a separate tank for one).
(3) Dwarf Golden Moray Eel (I love eels but have never had a tank suitable for one. The dwarf golden moray has always seemed like the perfect solution, but I am hesitant to invest so much in one).

I know for me at least that it would be a few reasons as to why I wouldn't have one in my current tank.
1 - my understanding is that they are best kept in at least a pair
2 - they need a large tank as they'll grow quite big, especially when you have two of them
3 - availability, I've never seen any in stock on any website or at any of my local fish stores.
