Agreed on all fronts, and I think your point (as I interpret it) is good: the beginner should have a good grasp of the water chemistry. And once the tank is reasonably stable they don't need to start with zoas, LPS if they don't want. They can go to some more hardy SPS, as long as they can manage to keep their water conditions appropriate and stable.
