Mine do this as well as my hammers and appear to be feeders and I regard as signs of a happy euphyllia.
They have similar which are stringy and are Stringers.

But why would only one or two tentacles on this coral be long and stringy?

My frogspwan is a serial coral killer. It has tentacles that reaches out about 4” and very strong sting. Cannot see your pic clearly but it could be stinger tentacles

So does it only have 1-2 stinger tentacles? It only has 2 long tentacles
