What meters or test kits do ya'll recommend for pH testing?

Nyos, then Hanna. I find the Nyos is pretty much bang-on with respect to accuracy compared to the the Hanna (I have and use both whenever I test, and they're within ±0.005 of each other).

I vote for pH probe and some kinda of controller/monitor. I have a basic Apex that monitors pH.

I think its more useful to have a pH monitoring so you can look at pH swings and detect if pH drops too quick indicating something major is wrong and it gives me an alarm

Just testing for it at a certain point in time tells me very little

.
 
I forget which Hanna one I have, but it's super accurate to 2 decimal points (it's the white and black model). I also have the pH probe through my Apex which also closely matches the Hanna results.
