What size Skimmer

Your skimmer can never be too big. IMO. That said, it should not be so big that it overflows your system if the power goes out. ;Woot

I don't agree, if its too large you can't get enough foam head and it can collapse leaving you without collecting any. Its about the neck diameter however, not the rating the manufacture gives it.

True, you have to stick within the sump height and flow rating based on manufacturer spec. I’d go as big as possible while not operating outside of the skimmers intended design. I recommend a recirculating skimmer for fine adjustments, assuming you have the space.

I generally recommend going plus one on the size for most medium sized tanks. I run a RO 150SSS on my 75g with currently a light bioload and the foam has never collapsed. On my old 40B I ran a RO NW110 then a SCA 302 rated at 150g, both considered oversized. Ran the same SCA 302 on a 75g upgrade as well. What size tank, corals, light or heavy bioload?

I currently have a Red Sea 43g mixed reef tank with a heavy bio load. Currently running a Reef Octopus Classic 110sss 5". I am not happy with how hard it is to get dialed in It seems to skim ok once it is.

My reason for asking this question is because I am planning out a 210g mixed reef with an average bioload. I was looking at the RO Classic 200SSS but I want to make sure this will do the job it is supposed to and do it without having to fidget with it all the time.

After reading FratyParty's comment I am now leaning towards the RO Regal 200SSS but is it worth the extra $350?
