What tests should I be taking and how often should I be testing my QT?

Ammonia and copper depending on treatment. I'd have a Ph test handy for just incase

I would check your nitrites as well. QT systems can be hard to keep cycled. I typically check both every day or two when I run QT and do water changes to keep them in check until they disappear.

Temperature
Salinity
PH
Ammonia
Nitrite

Copper (when in use)

How are you monitoring the temperature?

I just used one of those cheap glass thermometers that you get at any pet supply store. Although, after a couple of months it stopped suctioning to the glass so I do need to get a new one.
