If I have fish in my reef now and didn't qt .....if I catch the fish and put them in qt and let my tank go fallow for 72 days or whatever it is, do I need to take out snails, hermits, and shrimp also??

All corals/inverts remain in your DT during the fallow period, as only fish can host fish parasites. Continue to target feed your corals/inverts during the fallow period and/or throw in a pinch of flake/pellets every few days to maintain your bacteria levels.
