I've been using Instant Ocean Reef Crystals until now (because it's the cheapest reef grade salt I've found and seems to do fine), but a good friend (who has an amazing reef) recommended I use an evaporated salt like Red Sea Coral Pro. I'm thinking I'll give his method a try since he's definitely a guy I'd love to copy in this hobby, but I'm curious to know if anyone has compared these (or similar salts)? Why are evaporated salts better? I confess I don't know much about chemistry, so anyone who can dumb this issue down for me would be greatly appreciated. :-)

Absolutely nothing wrong with using Reef Crystals. Thats a high grade salt mix. If his tank looks better, find out what his numbers are compared to yours.

The magic is not in the salt, but how you use it. :)

If you have trouble finding 100 amazing looking tanks that use Reef Crystals (or just about any other favorite you'd want to suggest), let me know and I'll help!

I would suggest people use the most locally-available salt that fits their budgets and most closely fits their tank requirements. I don't know that brand necessarily has to come into it. IMO.
