I know that you can't just leave a tank alone for 6 months and expect it to be established and stable, but for us regular reefer, what happens in the first 6 months that make many people say the 6 month mark is when the tank is stable and established?

I don't know about the specific time, but reef tanks are fully cycled by then. The biofilter is established, coralline is growing on the live rock, unwanted critters can be found and removed, etc. I think a well maintained tank gets even more stable with time. Just my personal experience.

Some people think its one year?
6 months just seems like the tank has had time to go though its cycle.
Some people it's 21 days others its a month and a half.
Then you go though the adding more rock or changing rock adding fish then adding coral
Corals take a little while to adjust to a new system
and by the time u start to see growth it's about 6 months into the life system.
Things start to grow bc everything has that slime coat
Green algae has come and gone (hopefully gone)
Coraline algae is showing up... It's just a process

I don't think it's like at 6 boom the tank has an "ah ha" moment and everything flourishes.

It's like how a skimmer takes a few days to get the slime coat on it and break its self in.

I don't think there is a magic number when a tank is "established". I think it depends on the hobbyist and how they set up the tank. I think some good ways to determine if the tank is established is to consider how stable the water parameters are. Can the hobbyist overfeed for a day and not spike the parameters? Does the tank have nuisance algae? I think the answers to these questions help determine when the tank can be called established.
