Will the cycle be ok unattended?

Everything for my tank is ready for placement. Going to be cutting out my wall, adding plumbing, adding rock and substrate today. My problem is that in 2 weeks I'm going to Niagara Falls for an extended weekend. If I were to add water over the next week and begin my tank cycle would be be ok left unattended for a few days? I don't want to start things if evaporation will cause issues to my cycle. I'm excited to get things going but I don't want to blow it at this point either.

I think you should be fine to let it be for a few days, especially if you have a lid, it will cut down on evaporation.

I assume you are doing a fishless cycle?

The cycle will be fine. Just add some source of ammonia before you leave. While evaporation, unless extreme, won’t cause issues with the cycle it’s a good idea to get an auto top off as soon as possible.
 
Doing a fishless cycle. Mostly dry sand and rock but will be adding a few cups of wet substrate and a wet rock or 2 also for additional hitchhikers
 
As for the auto top off that will come later. Wife has been pretty understanding so far but has started to notice that everything is costing more than 1 dollar lol
