Yeah I typically do too but I like a leaner steak every now and then. My wife isn’t eating steak tonight so if it’s just me, I go with the strip. The ribeyes are massive and I can finish maybe half of one. Best to have those with her.I prefer ribeye (prime cut) for the marbling.

I usually finish a thick cut 18oz ribeye. When I go out, I usually get the 18oz med rare prime rib, with veggie, rolls, and a magarita.Yeah I typically do too but I like a leaner steak every now and then. No red wine? Margaritas are Mexican food territory and I absolutely love both!

I stuff garlic cloves inside roast, marinate in red wine with fresh rosemary, and Montreal steak seasoning. Oven @365 until internal temp is 125. Then cover in foil for 10 mins as it still cooking inside. Perfect pink inside. Make the aujus with the roast drippings and fresh thyme and reduce, add a little cornstarch to thicken sauce to your liking.
