Whenever something isn't going right in my tank I just do a (big) water change and go drink a beer... It's usually better if I don't keep agitating things and just let it settle.

My starfish is looking discolored in some spots. I tested nitrates and they are low. What could this be?

I agree with Katrina... See if you can get something fresh from the grocery store, like shrimp or fish without anything on it. Chop it up really fine and then freeze it in ziplocs in thin sheets. Then you can break off a little piece and drop it in the tank. Or, for easy mode, if you can get to a fish store get some frozen Mysis.
