I haven't looked into whether or not the resin goes bad but my hunch is it will eventually once the bag is opened. There is a reason for using the bags they do when it's packaged at the factory. Different plastics have significantly different gas and moisture transmission rates. Low density polyethylene is pretty poor and lets lots of moisture, CO2 and O2 through. Double bagging will help slow it down. Best thing you can do would be to store your unused resin in a glass container with tight moisture proof lid.
