Skimmer recommendation

I have Aquamaxx EM300 0n my 120 +30 sump work great. Its rated for 300

Go 2 times water volumn and should be good. Also have heard of people not running skimmer 24-7

Now the other question is how big is to big

AS big as you can stuff in there. The bigger the better. Twice the total water volume is a good start.
