Oh man... 
With your tank looking that great and being predominantly LPS/Softie I would say take it really slow if you do wish to lower your nitrates with carbon dosing. Those acans look nice and puffy in your photo, they probably won't look as happy if you're nitrates were sitting near 2... Especially if you reduced them rapidly.
