Looking for an accurate digital thermometer

Best temp probe I have used in years of HVAC/ reef tank +-1 F waterproof.

While I can respect your request for a perfectly accurate thermometer, I'd posit that in the end, it is only measuring a point in your tank, and a highly reliable thermometer would suit your needs better.
I have one that came with a bayite. They fail quickly, but I spent some time playing with it and determined it was the connector that was bad. I replaced the connector and it has been rock-solid since. Easy to read, controls well, seems reliable now that I've replaced the original connector. (I don't recall where I got a replacement, but it had 2 screw terminals. I'm good with a soldering iron, but this was too easy)
 
Also keep in mind that the fluke 52 is the gold standard for calibrating anything that is temp controlled. They are used when calibrating medical equipment.
my only concern is I don’t know what the probes are made out of and wouldn’t want to put that in my tank.

I don't leave the probe end in the tank any longer than taking a measurement. Not sure what the probe ends are made of, but they have never corroded on me.
 
I use this

$40 and accurate to .5 F.

From my home brewing I use the CDN DTQ450X.

I've dropped it into buckets of saltwater a couple of times and it has kept working.

 
I got the newer inkbird 306t the blue WiFi with two probes. This is my second I had the green one with one metal probe for a year. I will say the inkbird was reading exactly the same as the reading from Hanna temp from the start. Very pleased with this model. With this model probe placement is key I have one probe in the return section of the sump and one probe in the over flow of the display. It seems to be very accurate and runs the two tru temp heaters like a champ. Good 47.00 purchase for me at least
Interesting, I put both of my probes in the return chamber of my sump. I wasn’t sure where to put them and it’s hard to find any information on where too? I’ll have to give that a try. I agree it gives a very accurate reading. It’s about a degree off from my Hannah checker

I bought 2 of the Hanna's and both read exactly the same.

2. How do you know any of these are accurate

Consistency is much more important than accuracy for aquaria and there are many thermometers that can achieve this goal.

I should add. You are looking for a very accurate instrument.
You will need to look at the thermocouple type and pick the type with your desired accuracy.

Pick your probe, then pick a meter that you like.

Most thermometers are not as accurate as they say.
 
An HP2804A if you can find one. Failing that a four wire Pt resistance thermometer with a suitable bridge and a triple point of water cell to calibrate it.

The infrared type thermometers only take the surface temperatures. Best bang for your buck is a thermapen.
 
If cost is no object then a scientific thermometer is the only way to go in many cases. You can also have it uniquely calibrated.

 
There are three on that list certified accurate to 0.1 degree on a WIDE temp spectrum.
